Strawberry Matcha
Cold Foam

Strawberries and cream, in the shape of an iced matcha. The pink foam sits on top for about a minute before it starts sinking into the green —
that minute is the whole point.

Ingredients

  • Ice
  • ¾ cup (180ml) milk of choice

Matcha Base

  • 1½ tsp (4g) The Usual Strawberry
  • ¼ cup (60ml) warm water, never boiling

Strawberry Cold Foam

  • 4 tbsp (60ml) cold thickened or whipping cream
  • 2 tbsp strawberry purée (2–3 strawberries blended with 1 tsp honey)

To Finish

  • Dusting of The Usual Pure, or a halved strawberry

Method

  1. Make the purée. Blend the strawberries with the honey until smooth.
  2. Whisk the foam. Combine the cream and 2 tbsp of purée and whisk until just thick enough to hold a ribbon — stop before it turns to whipped cream.
  3. Dissolve. Whisk the Strawberry matcha with the warm water until smooth.
  4. Build. Fill a glass with ice, add the milk, then pour the matcha over the back of a spoon to keep the layers clean.
  5. Top. Spoon the strawberry foam over the surface and dust with Pure.
