Pure Matcha, The Traditional Way

Pure Matcha,
The Traditional
Way

No milk, no sweetener, nothing to hide behind. This is the one that teaches you what matcha actually tastes like —
and the water temperature is the whole recipe.

Ingredients

  • 1 tsp (2g) The Usual Pure, sifted
  • ⅓ cup (80ml) water at 70–80°C, never boiling

Method

Sift. Push the matcha through a small sieve into a wide bowl — this is the difference between smooth and lumpy.

Check the water. Boil the kettle, then let it stand for 3 minutes. Boiling water makes matcha bitter, every time.

Whisk. Pour in a little water and whisk briskly in a W motion for 20–30 seconds until a fine foam covers the surface.

Top up. Add the remaining water and drink straight from the bowl while the foam holds.
