Matcha Tonic

No milk, no sugar, all clarity. Sparkling water, a squeeze of lime and Pure matcha —
sharp, cold, and weirdly addictive on a hot afternoon.

Ingredients

  • 1 tsp (2g) The Usual Pure
  • 2 tbsp (30ml) warm water, never boiling
  • ¾ cup (180ml) sparkling water or tonic, well chilled
  • Juice of ½ lime
  • 1 tsp honey or simple syrup, optional
  • Ice

Method

  1. Dissolve. Whisk the Pure matcha with the warm water until completely smooth — no lumps survive this drink.
  2. Build. Fill a tall glass with ice, add the lime juice and honey if using.
  3. Top. Pour in the sparkling water, leaving room at the top.
  4. Layer. Pour the matcha over the surface and let it sink through the bubbles before stirring.
