Matcha &
Orange Blossom
Loaf

Soft, orange-scented and green all the way through. This is the one to put on the table when people come over —
it looks like it took effort and it didn't.

Ingredients

Dry

  • 1½ cups (190g) plain flour
  • 1 tbsp (6g) The Usual Pure
  • 1½ tsp baking powder
  • ¼ tsp salt

Wet

  • ½ cup (115g) butter, softened
  • ¾ cup (165g) caster sugar
  • 2 eggs
  • ½ cup (140g) Greek yoghurt
  • 1 tsp orange blossom water
  • Zest of 1 orange

Glaze

  • ½ cup (60g) icing sugar
  • 1 tbsp orange juice
  • ¼ tsp orange blossom water

Method

  1. Preheat. Heat the oven to 160°C fan and line a 21 × 11cm loaf tin.
  2. Mix dry ingredients. Whisk the flour, Pure matcha, baking powder and salt together.
  3. Cream. Beat the butter and sugar for 3 minutes until pale, then beat in the eggs one at a time.
  4. Mix wet ingredients. Stir through the yoghurt, orange blossom water and zest.
  5. Combine. Fold in the dry mix in two additions until just combined.
  6. Bake. Pour into the tin and bake for 45–50 minutes, until a skewer comes out clean.
  7. Cool. Cool completely in the tin — glazing a warm loaf makes a mess.
  8. Glaze. Whisk the glaze ingredients until smooth, pour over the loaf and finish with extra zest.
