DifficultyEasy
Makes8 small pancakes

Ingredients

Dry

  • 1 cup (125g) plain flour
  • 1½ tsp (4g) The Usual Vanilla
  • 1 tsp baking powder
  • Pinch of salt

Wet

  • 1 ripe banana, mashed
  • 1 egg
  • ¾ cup (180ml) milk of choice
  • 1 tbsp butter, melted

To Serve

  • Maple syrup, sliced banana, dusting of The Usual Pure

Method

  1. Mix dry ingredients. Whisk the flour, Vanilla matcha, baking powder and salt together.
  2. Mix wet ingredients. Whisk the mashed banana, egg, milk and melted butter until smooth.
  3. Combine. Fold the wet into the dry until just combined — lumps are fine, overmixing is not.
  4. Rest. Let the batter sit for 5 minutes while the pan heats.
  5. Cook. Cook spoonfuls over medium-low heat for about 2 minutes a side, until bubbles form and the edges set. Keep the heat low or the matcha will taste bitter.
  6. Serve. Stack, pour over maple syrup and dust with Pure.
